    • 250 grams paneer (cottage cheese), cut into cubes
    • 1 tablespoon oil or ghee
    • 1 teaspoon cumin seeds
    • 1/2 teaspoon turmeric powder
    • 1 teaspoon garam masala powder
    • 1 teaspoon coriander powder
    • 1/2 teaspoon red chili powder (optional, adjust to taste)
    • 1/4 cup fresh cream (optional, for a richer texture)
    • Water as needed to adjust the consistency
    • Fresh coriander leaves for garnish (optional)

Instructions

Step 1: Prepare the Spinach Puree

  1. Blanch the Spinach: Begin by washing the spinach leaves thoroughly. Bring a pot of water to a boil, and add the spinach leaves to it. Let them blanch for 2-3 minutes, until the spinach wilts and turns bright green.
  2. Cool and Blend: Remove the spinach from the boiling water and immediately transfer it to a bowl of ice-cold water to stop the cooking process. Once cooled, drain the spinach and blend it into a smooth puree using a blender. Set it aside.

Step 2: Prepare the Gravy

  1. Cook Onions and Tomatoes: Heat oil or ghee in a pan over medium heat. Add cumin seeds and let them splutter. Then, add the chopped onions and sauté until they turn golden brown.
  2. Add Tomatoes and Spices: Add the chopped tomatoes to the pan and cook until they soften. Stir in the ginger, garlic, green chilies, and all the dry spices (turmeric, coriander powder, red chili powder). Let everything cook for 2-3 minutes until the spices release their aroma.

  1. Add the Paneer: Gently add the paneer cubes to the spinach gravy. Stir them in carefully to coat the paneer in the sauce without breaking the cubes.
  2. Simmer: Let the curry simmer for another 5 minutes so the paneer absorbs the flavors of the gravy. If you like a creamier texture, add a tablespoon of fresh cream at this stage and stir until well combined.

Step 4: Final Touches

  1. Garnish and Serve: Garnish with fresh coriander leaves and serve hot with naan, roti, or steamed rice.
